Not only does Debian have live disks,
they have a tool (live-helper) that helps
automates most of the steps toward the
creation of customized liveCDs (chroot
install, install extra packages, make an
ISO).

Oop- it's live-build in later releases:

http://packages.debian.org/squeeze/live-build
http://packages.debian.org/sid/live-build

It's actually just a collection of bash
scripts and a framework to run them
in sequence, so it's very educational
to read the actual command executables.
